Quick Vegetarian Meal

Here is another quick meal suggestion. First, spray the baking sheet w/extra virgin olive oil and after washing your kale, lay it out on the sheet and bake it for 15 mins (or to your crunchy texture, taking into account the different baking temperatures due to the elevation at which you live). Put 1/2 c rice (your preference) to boil, wait 5 minutes, then sauté your mushrooms (your preference, but I love oyster and portabella mushrooms) in EVOO (extra virgin olive oil). Your rice and baked kale crisps should be ready. If you like spicy, then add a pepper to the mix. After plating, add 1/2 c baby tomatoes and enjoy the colors of the rainbow. Yield: 1 meal.
