It feels like we have mostly left spring behind and summer is quickly approaching; meaning the weather is getting hotter, and you are probably starting to notice that you don't feel like eating as much or eating such heavy foods. Well here are a few ideas. As I woke up later into the day this morning, and looking towards another healthy and balanced day, I planned my baking time to coincide with my 1-mile walk. So, I brought out my Krusteaz GF Supreme Muffin Mix, modified it slightly by using pureed fruit (instead of vegetable oil) and almond milk (instead of water). As it sat baking in the oven, I went for my 1-mile walk (17 mins). When I returned, I checked it out, left it in for an additional 2 minutes, removed the pan to cool, and then headed out for an additional 1-mile walk. By the time I returned, it was 11 o'clock. I quickly made a 2-Egg Spinach Omelet (using minced garlic, jalapeno peppers, cumin and black pepper, 1/8 c shredded Mozzarella cheese, 1T Feta Cheese and baby tomatoes). To its center, I added strawberry Greek Yogurt and garnished the meal with more baby tomatoes (a favorite of mine). It was absolutely delicious and very satisfying. I had incorporated all the various food groups and had health, balance, variety and moderation present. I treated this meal as both my breakfast and lunch as I sat down to enjoy it.
